Yummy Zucchini Bread

It's mid-week and mid-summer and a cloudy day.  Perfect for an indoor family activity.

Here is a recipe for one of my families favorite treat----Zucchini Bread (with optional chocolate chips).  A whole loaf will be gone in no time at all and I'm a content mama knowing that the kids finally got some green veggies into their growing bodies.  My kids love helping me measure and mix the ingredients.


Healthy and Yummy Zucchini Bread
Makes 2 small loaves or 1 big loaf

2 cups flour (white and wheat flour combined)
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
3 eggs
1 cup sugar
1 cup applesauce
1 teaspoon vanilla
2 cups shredded zucchini (about 2-3 zucchinis)
1 cup chocolate chips (optional)

1.   Preheat oven to 350 degrees
2.  Mix together all the dry ingredients and wet ingredients, then mix all together
3.  Do not overmix the batter
4.  Pour the batter into prepared pan and bake for about 1 hour 15 minutes.
5. Enjoy!
